Caramel Sauce

Knowing how easily this can be made makes this a perfect dessert choice for special occasions when you haven’t had time to bake. If you want to make a larger amount, just use a larger pan. Serves 4 or so.

To caramelize sugar, get med.-small heavy skillet smoking hot. Remove from heat, sprinkling sugar in (enough of a layer to cover the bottom of the pan):

> 1/2 c. sugar

When sugar’s “melted” (it will become a golden brown syrup), slowly add cream, stirring to incorporate some of it before adding the rest:

> Approx. 1/4 c. cream

Pour into a creamer/ pitcher, dish up the ice cream, and enjoy!
